Persica is a new barrel aged sour ale conditioned on local peaches.
We selected barrels of mixed fermentation Grisette to create a blend with balanced acidity and funk while remaining refreshing and drinkable. We took a day to process 300 lb of Connecticut peaches in August of 2021 and let the beer go through secondary fermentation on the fruit.
After many months the beer was bottled. A third fermentation in the bottle allows natural carbonation to build and flavors to meld and mature. After 4 months in the bottle we think it finally ready to enjoy. 5.7%, $17 per 750ml bottle.
