Back in July of 2021 we processed 300 lb of Glastonbury strawberries and added them to a special blend of three different saison barrels, ranging from one to three years in age. Barrels were carefully selected based on balanced acidity, tannin, and wild yeast character. Secondary fermentation on the strawberries produced a dry, bright, and complex beer with the taste and aroma of fresh strawberries.

We take great pride in producing these special bottles. They are the most involved and time consuming beers that we make, but also the most rewarding in some ways. From multiple brew days, to filling barrels, selecting barrels, blending, processing fruit, secondary fermentation, bottling, and conditioning, these bottles usually take 3 years total to produce, starting at the oldest barrel selected. Some natural fruit sediment may be present in these bottles. Chill completely for at least 2 hours before consuming. Naturally carbonated in the bottle.
