1-750mL bottle of Tupelo, a barrel aged sour ale brewed with local honey. For this project, we blended one, two, and three year old barrels containing mixed fermentation saison. Two of the barrels had large amounts of local wildflower honey added to them from Hilltop Apiaries in Simsbury CT.
The resulting blend shows notes of earthy honey, a kiss of oak, light brettanomyces funk, balanced acidity, and deep complexity from the wide array of microbes in our house culture. We are pretty dang happy with this one! Label artwork by the talented Genevieve May Siren.
